In traditional Chinese culture, nutrition was more than a daily balanced diet to maintain body functions. Foods were often used as medicines to manage and resolve acute illnesses, as well as chronic diseases. This course provides students with the basic knowledge in how to use foods as 'medicines'. The course examines: the energetics and healing properties of the major food groups; guidelines for combining or eliminating specific foods to create 'dietary prescriptions'; how to develop long-term nutritional strategies to meet the specific health and healing needs of each individual client. While the guiding principles of this course are classically Chinese, the foods examined and discussed during the course will be ones that are readily available to American clients. [ 4 credits ]
