An understanding of the functions and dietary and minerals) is essential to effective nutrition care. This course explores each of the micronutrients, including its metabolism, physiological functions, food sources, supplemental forms, and recommended intake. Laboratory assessments for nutritional status, along with signs, symptoms, and causes of micronutrient deficiency and toxicity, as well as nutrient-nutrient and nutrient-drug interactions are reviewed. Students learn to interpret micronutrient research for use in nutrition care planning and develop menu plans and supplement recommendations to meet clients` micronutrient needs.
