An understanding of the functions of and dietary requirements for macronutrients (i.e. carbohydrates, lipids, and proteins) is essential to effective nutrition care. Students explore the macronutrients, including their structure, digestion, absorption, transportation, metabolism function, food sources, and recommended intake. Assessment of nutritional status, along with signs, symptoms, and causes of macronutrient deficiency are reviewed. Students learn to evaluate the benefits and risks of popular diets, with an emphasis on macronutrient content, sufficiency, and ratios. Prerequisite: ISCI-547A. [ 2 credits ]
